Well, dear friends, I thought I should provide you with a better salsa recipe, since I was kidding in wondering why the kiddoes didn’t like that last one – it was horrible. Way too much onion… and the consistency was awful. So, here is one that always goes over well…

Salsa for a Crowd

4 cans diced tomatoes with green chilies, drained
1/2 red onion, chopped fine
1 bunch cilantro, chopped (excluding stems)
juice from 1 lime
1 tbsp sugar
5-6 cloves garlic, pressed
1 tsp crushed red chilies
1 tsp salt (or more to taste)
2 jalapeños, diced (remove seeds if you don’t want it too hot)

Adjust seasonings to taste. Serve with really good, low salt tortilla chips. One or two diced avocados are good in here, too.

    >Salsa can be tricky, I’ve found – so many variations it can be mind boggling and (gasp!) send you heading right for a bottled version! But this one sure sounds like a winner.
